3 ripe avocados peeled and diced (set aside and sprinkle with fresh lemon juice)
1 cup thinly sliced mushrooms
3 cups watercress washed and chopped
1 onion finely chopped
2 garlic cloves minced
1/2 cup chopped chives and parsley mixed
1 pinch sea salt
Freshly ground black pepper to taste

Place all the ingredients in a bowl, mix together and serve with Vinaigrette (page 100).
